How to Make Fudge from Scratch

Are you tired of making burnt or tasteless fudge? Or are you tired of the same old fudge recipe?

I have been there and I totally understand your frustration!

No matter how hard I tried to make great fudge I always ended up with the same results.

I would try to whisk the chocolate fast then I would try to whisk it slow.

I would change the order in which I added the ingredients. I would even try to take out some ingredients that I thought was giving me unsatisfactory results.

I got to the point where I was beyond frustration.

But, I have to let YOU in on something. I OVERCAME this little bump in my candy making road and so can you!

I have learned a few secrets that made my ordinary candy into extraordinary delicacies.

Often times many candy makers encounter many challenges in their candy making endeavors. Especially when it comes to making fudge!

Here is the secret. I now use very strict temperature control when using any fudge recipe.

Mainly with chocolate because it can scold and burn REALLY easy. This can make a gross burnt overall taste and after taste.

No matter if you are cooking with white chocolate, milk chocolate, or dark chocolate you need to keep your stoves temperature range at a low to medium setting.

Otherwise you will be wasting time and money because you will be left with a batch of candy that no one will eat!!!

Uneaten food will hurt any cook's feelings! LOL!

I control the temperature by using a candy thermometer. Most people believe they can make candy without it.

I am here to tell you that this little gadget WILL make the difference in the taste and texture of your homemade candy creations!

'Cake Boss' looks for recipe for good TV

If you think President Obama's got a lot on his plate, you gotta see the opening night of "Cake Boss."


It's exhausting just to watch.


It's also probably fattening just to watch, given that everything revolves around flour, sugar, eggs and icing.


Not that anyone at Carlo's Bakery has time to eat. Things are moving that fast for Buddy Valastro and the Valastro family, which, in just an hour tonight, has to handle two huge parties for the family and one for New Jersey's incoming governor, Chris Christie.


The Valastros are baking a cake that has to serve 2,000 people.


Buddy decides the cake will also be a celebration of New Jersey, which means the top will be decorated with sculptures of produce (the Garden State), lighthouses, New Jersey Turnpike signs and everything he or anyone else can think of.


Skip the toxic waste dump jokes, please. But there is a small sculpture of the governor, arm raised in "a little Jersey fist pump."


It takes about eight Carlo's employees to carry the cake into the Prudential Center, and when they get there, the gov loves it.


This is great promotion for the bakery, though it could have troubling implications for the show.


"Cake Boss" works because it's an engaging story about a family business and the family that runs it.


True, Carlo's provides specialty baking for unusual occasions, and that's part of the drama. But if the show becomes exclusively about catering to the stars, or politicians, it becomes a very different show than if it's about a place where ordinary people walk in wanting an extraordinary cake.


Tonight, Buddy is also working on a 30th-birthday surprise for his wife, Lisa: a life-size cake sculpted to look like her, in her precise dimensions.


One of the minidramas in this process is the all-important facial sculpture, which Buddy entrusts to a new hire, Ralph, who looks like he walked in from the set of "Guys and Dolls."


So it's fun to watch Lisa's cake double come together, though one suspects Buddy doesn't really want dozens of people to come through the door asking for similar sculptures of their own spouses.


Weird cakes are definitely part of the fun. If they become the whole show, though, that's like too much icing. It could overpower a good thing.

How to Make It

Using a medium size mixing bowl add the chocolate fudge pudding mix and 1 cup of milk and whisk together until smooth.

Thinly slice the bananas and then arrange them on the bottom of the graham cracker crust evenly. Pour the chocolate fudge pudding over the layer of bananas and spread evenly.

Using a medium size mixing bowl you will add the remaining cup of milk and the butterscotch pudding mix, and then whisk together until smooth. Add 1 cup of whipped topping and fold in. Pour the butterscotch pudding mixture over the layer of chocolate pudding and spread evenly.

Spread the remaining whipped topping over the last layer of the dessert and place in the refrigerator to chill overnight or for at least 8 hours. Drizzle the pie with butterscotch syrup just before serving.

A Desert Recipe - Ruth's Famous Carrot Cake

This is the famous Ruth Carrot Cake Recipe. In my opinion this is by far the best tasting carrot cake recipe in existence. This recipe is named after my sister-in-law Ruth. She introduced it to me and she has been making it for over 25 years and it is fantastic. I think you will find it tastes much better than anything you can buy in a bakery or store.

This is Part 1 of the recipe, the cake portion, the icing portion is below in Part 2.

You will want to use a large size mixing bowl to mix all of the following ingredients.
2 Cups flour
2 cups Sugar
2 Teaspoons Baking soda
2 Teaspoons Cinnamon
1 Teaspoon salt
4 Eggs
1 and 1/4 cup Canola Oil
1/4 cup applesauce
6 Large Carrots.

First take your large mixing bowl and add your 2 cups of flour, 2 cups of sugar, 2 teaspoons baking soda, 2 teaspoons cinnamon and 1 teaspoon of salt.

Stir all these ingredients together and then set aside. Next in your mixing bowl beat your 4 eggs until fluffy. Then with the mixer running slowly pour in the 1 and 1/4 cup canola oil and the 1/4 cup applesauce.

Next with the mixer running on high speed slowly add your first bowl of ingredients and beat on high for 2 minutes.

This next step you will probably want to do ahead of time. Take your 6 large carrots and grate them with big 1/4 inch holes on a grater. This should produce 3 cups of grated carrots.

At this point you want to slowly blend in your 3 cups of grated carrots to your mix. You want to have your mixer running at low speed for this and you do not want to mix the carrots for very long.

This recipe will make enough cake batter for two 9 inch cake pans or one 9 by 13 inch pan.

Pour the cake batter in the pans and preheat your oven to 350 degrees. Bake about 42 minutes for a 9 by 13 inch pan and 30 minutes for the 9 inch round pans.

Please let your cake cool completely before icing.

Part 2 - Preparing The Icing

Icing Ingredients
1 8 ounce cream cheese
1/2 cup or 1 stick of butter
2 tablespoons vanilla
1 box 16 ounces powdered sugar or 3 and 3/4 cups
1 cup walnuts

Next while your cake is baking you can prepare your icing. In a good-sized mixing bowl add the 8 ounces of cream cheese, the 1/2 cup of butter and the 2 tablespoons vanilla. Next add your 16 ounces powdered sugar (3 and 3/4 cups) and 1 cup walnuts.

Note: Before adding the walnuts you want to chop them into small pieces.

Using your mixer blend all of your icing ingredients until the icing is thoroughly mixed.

Once your cake has cooled you can add the icing to the cake. For best results let your finished cake sit in your refrigerator overnight before serving. Serve the carrot cake to your guests and get ready for the complements.

White Fudge Recipe and Info

Less than 10 years ago white chocolate was not even considered chocolate by the FDA because it did not have any coco solids. Nowadays, white chocolate contains at least 20% of coca butter and is now officially recognized as chocolate. As a way to consume excess cocoa butter white chocolate was created according to Nestle. In 1948 Nestle introduced the first white chocolate bar.

A white fudge dish will be the perfect memorable delight at the next event you host. You will be viewed as a chef because so few people make white fudge from scratch. Follow the recipe below.

White Fudge Recipe

1 1/2 cups granulated sugar
2/3 cup (5 fl.-oz. can) evaporated milk
2 Tbsbs. butter
2 cups miniature marshmallows
2 cups (12-oz. pkg.) NESTLE TOLL HOUSE Premier White Morsels
1 1/2 cups honey roasted peanuts, divided
2 teaspoons vanilla extract

Directions:

1. Line an 9-inch-square baking pan with foil.
2. Combine sugar, evaporated milk, and butter medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly.
3. Boil, stirring constantly, for 4 1/2 to 5 minutes. Remove from heat.
4. Stir in marshmallows, morsels, 1 cup peanuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted.
5. Pour into prepared baking pan. Coarsely chop remaining peanuts. Sprinkle over fudge; press in.
6. Refrigerate until firm. Lift from pan; remove foil. Cut into 48 1-inch squares.

*Tip*- When melting chocolate be sure to melt it at a very low temperature.

Beautiful Recipe Organizer for Recipe Collectors Extraordinaire

If you’re a rock star when it comes to collecting recipes, welcome to the band.  I’ve been a recipe collector extraordinaire since the day I got married.  Recipes are a great passion of mine and the drawers, folders, recipe boxes, and tins filled with recipes support this fact.

In addition to a cookbook collection that would make AMAZON green with envy, I have recipes snipped from favorite magazines, newspapers, books, and index cards where I’ve jotted down recipes on the fly.  Not only are these recipes a great source for cooking, they’re unbelievably precious for strolling down memory lane.  I often jot little notes on recipes such as, “My husband said this was his favorite chicken ever” or “(insert daughter’s name) and I made these on a cold December evening.”

The recipes and the notes allow me to relive the magic all over again.

I also love to come up with my own recipes and concoctions – so I write them down as well with step by step instructions and amendments. More paper, more index cards, more recipes…

After years of cooking and collecting, they’re everywhere!  When I set out to find one, it can be like The Amazing Race taking place in my kitchen.  Recently, I had an epic search for a favorite sugar cookie icing recipe.  I’ll never get the 30 minutes I spent searching back, but it was kind of a kick to visit with all of the memories.

Perfectly Peachy Fresh Fruit Salad Recipe

I’m a total fruit fanatic and can never have enough fruit on hand. It’s healthy, delicious, fragrant, and a bowl of fruit (nature’s dessert) just makes a whole room look more attractive.

Below is one of my favorite recipes for fruit salad.  Feel free to experiment with different fruits, but don’t even think about leaving out the peaches.

Fresh Fruit Salad Recipe

2 Peaches
2 Apples
2 Nectarines
2 cups Strawberries
1 cup Red Seedless Grapes
1 cup White Seedless Grapes
2 Bananas
1 pkg. Peach Glaze
3 Tbs. Honey
3 Tbs. Lemon Juice

Use fresh fruit – very important! Slice and place the fruit combination into a large bowl. Combine the peach glaze, honey, and lemon juice. Pour over fruit and mix gently but well.

Keep refrigerated and just TRY not to eat it all at once!  I kid you now when I say this can easily pass for dessert.
