Cake Boss Recap: A Cake For Mama
The season five finale of Cake Boss that aired Monday night was a sad one.
As the episode opens we see Buddy's Mama back from Florida and in the bakery. She jokes with the customers. “I'm Buddy's mom, without me he wouldn't be here,” she says.
But Mama is sick. She's been diagnosed with ALS. Buddy tries to explain to the camera but it's obvious this is very hard for him to talk about. “It's a horrible, horrible disease,” he says. There is no cure.
ALS affects a person's ability to move, to do even the slightest tasks like feed themselves or tie their shoelaces. It's a creeping paralysis that doesn't happen in an instant, but over time. A person diagnosed with it sees their body breaking down little by little. They have to suffer the thought that they can't take care of themselves anymore.
Mama says her right hand started bothering her about a year ago, which she thought was because she had done so much paperwork over the years. Even after carpal tunnel surgery she still felt pain. After a while her doctors found the reason. “That was very devastating to me,” she says.
But she also says she's not going to give up. The family gathers around her, and Buddy promises to find her the best medical care possible. And to also pray. He starts to tell her how she impacted his life and he just breaks down and sobs. They exchange 'I love you's' and embrace.
Buddy meets with his sisters. They need to figure out who is going to take care of Mama. Buddy says he wants to take the lead.
He's also going to make her a nice cake. As he's gathering his ingredients Frankie walks over and says, "that's a lot of sugar." “She's a sweet lady,” Buddy responds.
Mama goes to see her doctor. He gives her some tests. Even squeezing his hand is hard for her. Mama asks the doctor what they should do and he suggests giving her new medicine time to work. He'll check again in two months.
Back at the bakery Buddy works on his cake for Mama. It's buttercream and caramel, and he's going to bring it to the family's Easter dinner at Madeline's house.
Buddy talks about what making this cake means to him. “Everybody's got their release for their problems,” he says. “People go to the gym, some people go for a drink. Some people go to a chiropractor or a shrink. Me, I just put it into my work.”
Later Buddy goes to see her. Buddy talks about how he wants to help his mother, and that he has the means to do so, but that her pride makes her resist.
“I pray every day, you know that,” he says. “So do I,” she says. “I do three sets of rosaries.”
Buddy wants to give his mother a caretaker. But Mama says she doesn't need one yet. Buddy says she should get one know so she can get used to the arrangement before it's too late.
He convinces her to take the help. “I just worry about you, and I want the best for you,” he says. “It's so hard,” she says. “I used to do so much.”
“I was there with her at the doctor,” Buddy says to the camera. “After the doctor says it's ALS she says 'well what do we do,' and the doctor shrugged his shoulders and says 'make her comfortable.' I read between the lines. I get that. I can't make her.”
Very sad. Back at the bakery Buddy finishes the cake for his mother. It's not crazy and over-the-top, it doesn't have hydraulics or explosives. It's a simple yet elegant cake fitting for a woman who can appreciate celebrating Easter with her family.
Mama does like the cake. So does the whole family. Buddy and his mother cut the first slice together. They're hand in hand, mother and son together as the episode ends and the credits roll.

Cake Boss and Mall of America's Anniversary
One of the largest malls in the country will celebrate its 20th birthday with the assistance of “Cake Boss” Buddy Valastro.
The Mall of America, which opened in Bloomington, Minn. on Aug. 11, 1992 as the largest U.S. retail and entertainment complex, is planning a birthday party complete with 2,000 pieces of cake.
To help the mall celebrate two decades, Valastro will prepare a special birthday cake for the mall’s 20th anniversary.
The cake stands 8-feet high by 4-feet wide and will be on display on Aug. 11 in the mall’s rotunda, the radio station reports.

'Cake Boss Cafe' opening in Port Authority Bus Terminal
Cake Boss — the popular cable TV reality show set in a family-run Hoboken bakery — is opening an offshoot in the Port Authority Bus Terminal, it was announced today. The Port Authority Bus Terminal is the central hub for bus travel to and from New York City. Located from 40th to 42nd streets, between Eighth and Ninth avenues, the terminal is both the largest bus station in the nation and the busiest in the world. More than 58 million commuters passed through the terminal in 2008.

Cake Boss Bakery at Lackawanna Center
Carlo’s Bakery will lease 32,000 square feet of ground-floor space at Lackawanna, as the building renovates 200,000 square feet of retail space for its The Shops at Lackawanna project, which is being touted as a major new retail plaza for Jersey City. Valastro’s new space will be used for distribution and filming, and it will also allow Carlo’s to take internet orders from customers all over the country. Lackawanna Center is a 1.3 million square foot retail/office/industrial complex situated directly outside the Holland Tunnel in Jersey City, NJ. Located at 629 Grove Street and bordered by Jersey Avenue, Sixteenth Street, Eighteenth Street, and Marin Boulevard, the property is blocks from Hoboken and close to NJ Transit Light Rail and PATH trains. The 13 acre site also includes two ground level 300-car parking lots, additional parking on the second level, and an elevated rail trestle which runs three city blocks. The property’s eight-story building is comprised of reinforced concrete construction, brick exterior walls and glass windows with a floor thickness of 21” solid concrete at each level.

Breaded Rack of Lamb Recipe
Ingredients:
2 Racks of lamb cut into chops (16 piece)
Salt and pepper
Olive oil
2 tablespoons rosemary, minced
4 cloves garlic, minced
2 cups Master Breadcrumbs
2 tablespoons grated parmesan cheese
1/2 cup Dijon mustard
Directions:
Preheat oven to 450 degrees F.
Pour about 2 tablespoons of olive oil into a skillet and turn to medium-high heat. Sprinkle in 1 tablespoon of rosemary and 1 clove of chopped garlic.
Season each chop with salt and pepper. Sear chops in rosemary garlic oil for 1 to 2 minutes each side. Remove from skillet and let rest 5 minutes.
In a bowl, combine breadcrumbs, remaining rosemary and garlic, and 4 tablespoons olive oil.
Brush Dijon mustard over each chop and coat in breadcrumb mixture. Place on rack over baking sheet.
Bake in 450 degree F. oven for 10-15 minutes until medium - medium rare.

Seared Scallops in Lemon Butter Sauce Recipe
Ingredients:
1 pound bay scallops, cleaned and patted dry
1 teaspoon salt
1/2 teaspoon ground white pepper
2 tablespoons olive oil
2 cloves garlic, chopped
3 tablespoons butter, cubed, at room temperature
1/4 cup freshly squeezed lemon juice
1/4 cup white wine
1 tablespoon capers, drained and rinsed
1/4 cup heavy cream
5 teaspoons chopped fresh parsley leaves
Directions:
Season the scallops on both sides with the salt and white pepper. Set a 12-inch sauté pan over medium-high heat and add the olive oil and garlic. Sauté for a minute then add the butter and melt. Place the scallops in the pan and sauté for 3 minutes on the first side, then turn and cook on the second side for 1 minute.
Add the lemon juice, white wine and capers. Cook for 2 minutes.
Add the heavy cream and 2 teaspoons of the parsley and cook for 1 minute longer.
Serve the scallops by dividing the sauce between 4 warmed, shallow bowls and place 3 scallops in the center of each bowl. Garnish with the remaining parsley

For the Mushrooms:
Heat a large nonstick skillet over medium high heat. Add butter and oil. When butter melts into oil, add mushrooms and season with salt and pepper, to taste. Add parsley to the pan. Toss to combine. Set aside.

Add the ground veal, season with salt and pepper and cook 8 to 10 minutes. Remove from the heat and let cool. Once the meat mixture is cool, add the amaretto, amaretto cookies, and wilted spinach. Stir to blend.
Lightly salt and pepper the lamb on both sides. Use the veal mixture to stuff the leg of lamb, dividing the stuffing evenly throughout the meat flaps created by the butterfly cut. Roll the lamb up and use butcher's twine to tie the leg so that none of the stuffing will spill out.

Cheesecake:
4 8-ounce packages cream cheese, softened
32 ounces sour cream
2 cups sugar
1 teaspoon vanilla
6 eggs
Directions:
For the crust:
Preheat oven to 350 degrees F.
Tightly wrap the outside of a 10-inch diameter spring-form pan with 2 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, brown sugar, and cinnamon in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Bake the crust until it is set and beginning to brown, about 12 minutes. Set aside to cool.
Increase the oven temperature to 375 degrees F.
For the filling:
Using an electric mixer, beat the cream cheese, sour cream, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula. Beat in the vanilla. Add the eggs, 1 at a time, beating just until blended after each addition.
Pour the cheese mixture over the crust in the pan. Place the spring-form pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the spring-form pan. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour.

8 ounces country-style, day-old, white bread, crusts removed
1 cup freshly brewed espresso
½ cup dark rum
2 tablespoons sugar
1 ½ cups chilled heavy cream
1 cup sliced almonds, toasted
Directions:
You will need a large rimmed tray or baking sheet, such as a half-sheet pan (12 by 18 inches); a spouted measuring cup, 1 pint or larger; 6 parfait glasses or wineglasses, preferably balloon-shaped.
Put the chopped chocolate in a bowl set on a pan of hot (not boiling) water. When the chocolate begins to melt, stir until completely smooth. Keep it warm, over the water, off the heat. Slice the bread into 1/2-inch thick slices, and lay them flat in one layer, close together, on the tray or baking sheet.
Pour the warm espresso into a spouted measuring cup, stir in the rum and sugar until sugar dissolves, then stir in half the melted chocolate. Pour the sauce all over the bread slices, then flip them over and turn them on the tray, to make sure all the surfaces are coated. Let the bread absorb the sauce for a few minutes.
Meanwhile, whip the cream until soft peaks form, by hand or with an electric mixer.
To assemble the parfaits:
Break the bread into 1-inch pieces. Use half the pieces to make the bottom parfait layer in the six serving glasses, dropping an equal amount of chocolate bread into each. Scrape up some of the unabsorbed chocolate sauce that remains on the baking sheet, and drizzle a bit over the bread layers.
Next, drop a layer of whipped cream in the glasses, using up half the cream. Top the cream layer with toasted almonds, using half the nuts.
Repeat the layering sequence: drop more soaked bread into each glass, drizzle over it the chocolate sauce from the tray and the remaining melted chocolate. Dollop another layer of whipped cream in the glasses, using it all up, and sprinkle the remaining almonds on top of each parfait.
This dessert is best when served immediately while the melted chocolate is still warm and runny.

Stir in heavy cream to desired creaminess. Cook for an additional minute. Stir in the remaining crab and cook to heat through, 1 to 2 minutes.

2 cups heavy whipping cream
4 cups cold espresso (Gloria uses decaf instant)
32 (approx) ladyfingers
1/2 cup sifted unsweetened cocoa powder
Directions:
Beat together the condensed milk, water and pudding mix. Chill in fridge for 1 hour.
In a bowl, beat the cream to soft peaks. Whisk the pudding mixture to smooth texture and fold in the whipped cream. Chill for 20 minutes.
Have a 9 x 13 inch serving dish ready. Pour cold espresso into a shallow bowl or pie plate. Whisk the pudding/cream mixture to lighten.
Spread a thin layer of pudding mixture on the bottom of the serving dish. Dip each ladyfinger into the espresso, both sides, and layer in the serving dish. Ingredients:
1 tablespoon butter
2 tablespoons olive oil, divided
1 ½ pounds large Italian sausage links
2 large onions, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cubanelle pepper, sliced
2 large russet potatoes, scrubbed and washed, cut into 1-inch pieces
12 large whole garlic cloves
1 cup white wine
1 teaspoon Italian Seasonings
1 teaspoon dry oregano

Directions:
Preheat oven to 400 degrees F.

All-purpose flour, for work surface
Corn meal, for sprinkling
1 tablespoon olive oil
3 cloves garlic, sliced
6 ounces mozzarella cheese, shredded
2 tablespoons freshly grated Parmesan cheese
2 basil leaves, torn
1/4 teaspoon dried oregano, crumbled
1/2 cup fresh ricotta cheese
Salt and pepper
Directions:
Place a baking stone on the bottom rack of oven. Preheat oven to 450 degrees F. for at least 30 minutes and preferably 1 hour.
Remove plastic wrap, and punch down dough to deflate. Divide the dough in half. Form into two balls. Cover each ball with plastic wrap, (refrigerating or freezing the unused portion). Allow the ball of dough to stand for 10 minutes.
After the rest, flatten one dough ball slightly on a floured work surface. Beginning in the center, use your fingertips to press the dough into a 1/2-inch-thick round. Turn and stretch until it will not stretch any further. Let rest for 5 minutes and stretch further, if necessary.
Lightly sprinkle a pizza peel with corn meal. Transfer flattened dough round to the pizza peel. If the dough has lost its shape while transferring, reshape as necessary.
In a small skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Brush garlic mixture over pizza dough, leaving a 1/2-inch border. Sprinkle with mozzarella.
Sprinkle baking stone lightly with corn meal. Slide pizza from peel to baking stone and bake for 5 minutes.

Open oven door, and working quickly, dollop with spoonfuls of cheese mixture. Return to oven and baked until crust is golden brown and topping is bubbling, about 5 to 7 minutes.
